Salsariffic Breakfast

4 Tortillas

2 cups Grated cheddar cheese, divided

* Fresh tomato salsa

* Sour cream

* Fried egg

  1. Bring pan to medium heat. Once hot, place a tortilla to toast one side. Flip over, spread cheese on half of the tortilla, and fold in half once both sides are heated through.
  2. Repeat with remaining tortillas. Slice into wedges, and serve in individual serving plates with fresh salsa, sour cream, and sunny side up egg.

*Fresh Tomato Salsa

½ kilo Ripe tomatoes, diced

1 Onion, finely diced

¼ cup Fresh cilantro, chopped

½ tsp Dried basil

½ tsp Dried oregano

¼ tsp Cumin

1-2 tsps Dried chili flakes

½ tsp Lemon zest

* Juice of 1 whole lemon

* Small pinch of white sugar

* Salt and pepper, to taste

  1. In a large mixing bowl or food processor, combine all ingredients and mix together until well incorporated. If using a processor, pulse a few times until desired consistency is reached. Season with salt and pepper to taste. Cover and refrigerate for at least 4 hours or overnight before serving, to let the flavors blend well together.
