Long commute to work making you hangry in the morning? Here’s a simple grab and go breakfast recipe! What makes it better? You can make it ahead and freeze it. Just pop it in your microwave or toaster and you’re set!
QUINOA BREAKFAST BITES

Makes 6 servings
1 cup Uncooked quinoa
4 Large eggs
2 Tbsps Milk
1 cup Leftover SPAM, bacon, ham, or hotdog, diced small
1 cup Cooked broccoli florets (or frozen carrots, corn, and peas)
Salt and pepper, to season
½ cup Grated mozzarella cheese
- Wash quinoa then soak in water for a few minutes. Pour into a strainer and drain. Cook quinoa according to package directions or cook it like rice in a pot or a rice cooker.
- In a mixing bowl, beat eggs and milk. Toss in meat and vegetables of choice.
- Add the cooked quinoa and mix well. Pour mixture into greased muffin pans and top with grated mozzarella cheese.
- Bake at 350°F for about 12-15 minutes or until eggs are just cooked. Remove from the oven and carefully transfer quinoa bites to a serving plate.
