Don’t let your queso de bola spoil in the refrigerator! Make it into a fancy bread spread like this creamy concoction flavored with pimiento. Use it as an appetizer or as a quick merienda. You can even mix it up with other cheese like cream cheese, blue cheese, and even kesong puti.
QUESO DE BOLA PIMIENTO SPREAD
Makes 2 cups
2 cups Finely grated queso de bola
¼ cup Butter, melted
¾ cup Mayonnaise
⅓ cup Chopped canned pimiento
¼ cup Condensed milk
¼ cup Evaporated milk
In a mixing bowl, mix all the ingredients until well-incorporated. Chill in the refrigerator until ready to serve. Spread on top of crackers, toasted bread, or crostini.
