You’ve probably encountered these huge tiger prawns. With a plump and buttery texture, the tiger prawns can fit in any cooking occasion, from grilling to baking. For now, it’s roasted and mixed in a salad, a perfect way to get a serving of Asian tiger shrimps.
Roasted Tiger Prawn Salad
Makes 5-6 servings
12-14 Tiger prawns, peeled and deveined
- Olive oil
- Salt and freshly ground black pepper
¼ cup Light mayonnaise
¼ cup Fresh orange juice
2 Tbsps Red onions, minced
- Chopped fresh dill
2 Mangoes, peeled and sliced into cubes
¼ cup Feta cheese
- Red pepper flakes
- Preheat oven to 400°F. Place the prawns on baking sheet and sprinkle with olive oil, salt, and pepper. Roast for 5-7 minutes and turn once after 2-3 minutes. Remove from the oven and let cool.
- Mix mayonnaise, orange juice, red onions, and dill in a large bowl. Add roasted prawns, mango cubes, and feta cheese. Sprinkle with salt and red pepper flakes. Serve cold over a bed of greens.
