Get Spooky with these Fun and Scary Stuffed Jack-O’-Lantern Peppers

These little treats are so easy to make, you and your kiddo will enjoy making it in the kitchen. Bring a Halloween vibe to your table with the smiling faces of these Stuffed Jack-O’-Lantern Peppers. Each scary piece is filled with ground lean pork, potatoes, carrots, raisins, and bell peppers that make every bite so flavorful! Get your creative juices flowing and carve those orange bell peppers into mini creepy Jack-O’-Lanterns!



Makes 3-4 pieces

2 to 3 tablespoons oil
500 grams ground lean pork
1 piece medium-sized onion
2 pieces medium-sized potatoes, diced
2 pieces medium-sized carrots, diced
1/3 cup raisins
1 piece laurel leaf
3 to 4 tablespoons soy sauce
1/4 cup medium-sized chopped green bell pepper

3-4 pieces large bell peppers, hollowed and carved

  1. Heat oil, add ground pork and cook until opaque. Add in the onion and garlic and pan sauté until aromatic and translucent.
  2. Add the carrots and potatoes and continue cooking until they’re tender. Add raisins, laurel leaf, and soy sauce.
  3. Give a quick stir and continue cooking for another 3-5 minutes, toss in the green bell pepper and season to taste.
  4. Transfer the cooked mixture into hollowed out Halloween-orange bell peppers.
