This indulgent treat won’t make you feel too guilty.
OATMEAL PEANUT BUTTER COOKIES

Makes 3-4 dozen cookies
½ cup Creamy peanut butter
⅓ cup Corn oil
1 tsp Vanilla extract
½ cup Brown or white sugar, or a combination of both
½ cup + 2 Tbsps Sifted all-purpose flour
½ tsp Sifted baking powder
¼ tsp Sifted baking soda
½ tsp Ground cinnamon
1 ½ cups Rolled oats
½ cup White sugar
- Preheat oven to 350°F. Line four cookie sheets with baking parchment or silicone baking mat. Set aside.
- Pour in the following ingredients into the mixing bowl of an electric mixer—peanut butter, oil, vanilla extract, egg, sugar, flour, baking powder, baking soda, cinnamon and oatmeal. Beat at medium speed until blended.
- Using a small ice cream scooper, form cookie batter into balls. Arrange 12 pieces per sheet. Dip the bottom of a drinking glass in white sugar and use it to press the cookie to flatten completely.
- Bake for 10 minutes or until set. Cookies will still be quite soft but the color of the bottom of the cookie will already be golden brown. Allow to cool completely before transferring into containers with a tight-fitting cover.
