Savor the goodness of this grilled chicken made more flavorful with seasonings and the goodness of lemongrass. Once the meat hits the grill you’ll be entranced by the aroma. Try using this incredible marinade also for pork and lamb.
Lemongrass BBQ Chicken
Makes 4-5 servings
1 kilo Chicken legs and thighs
3 stalks Lemon grass (white part only), finely chopped
5 cloves Garlic, minced
4 Tbsps Light soy sauce
2 Tbsps Patis or fish sauce
Juice of 2 lemons
5 Tbsps Sugar
Ground black pepper
2 tsps Red chili flakes
- In a bowl, combine lemongrass, garlic, soy sauce, fish sauce, lemon juice, sugar, black pepper and chili flakes.
- Marinate the chicken pieces in this marinade for at least three hours or overnight.
- Grill the chicken over live coals, turning to cook the other side. To prevent too much charring (skin will char because of the sugar in the marinade), wrap chicken in foil when halfway done and continue to cook over hot coals. Serve hot with a side of sweet chili sauce.
