Bagoong Fried Rice

Bagoong Fried Rice
Serves: 3-4
Wondering what to do with your leftover rice? Put your jar of bagoong to good use and create this tasty fried rice recipe.
  • 1 egg, beaten
  • 2 tbsps oil
  • 2 cloves garlic, chopped
  • 2 tbsps bagoong
  • 1 tsp dark brown sugar (optional)
  • ½ tsp chili powder
  • 4 cups cooked rice
  • 3 spring onions, coarsely chopped
  • 1 sprig coriander, chopped
  • ¼ cup green mango, shredded
  1. Heat a non-stick skillet and coat with oil. Slowly pour in the egg while rotating the pan.
  2. Cook omelet until light brown underneath. Flip and cook the other side. Set aside and cut into fine strips when cooled.
  3. Heat garlic in oil until soft. Add bagoong and sugar. Add the rice and mix until thoroughly combined.
  4. Add spring onions and coriander and combine.
