Seafood Hot Pot
 
Ingredients
 
2 liters Seafood/Chicken Stock (plus 1 more liter for refill)
 
2 Tbsps Fish sauce
 
2 tsps Sugar
 
1 small knob Ginger
 
½ Radish
 
1 pc Sole fillet
 
150g Mussels, soaked in water for an hour
 
100g Squid rings
 
17 pcs Shrimps
 
1 pack Squid balls
 
1 pack Prawn balls
 
1 pack Lobster balls
 
1 pack Fish cake
 
1 Small cabbage
 
1 bunch Taiwan pechay
 
2-3 bundles Sapporo Long Kow Vermicelli
 
3 pcs Thai chili, chopped into rings
 
2 Tbsps Light soy sauce
 
1 Tbsp XO sauce (optional)
 
1 handful Coriander
 
 
Procedure:

     
  1. Bring 2 liters of stock to a boil. Add ginger and radish. Season with fish sauce and sugar. Cut all ingredients in bite sizes and put on individual plates.
  2. Put hot water on a bowl then add Sapporo Long Kow Vermicelli Noodles. Drain when cooked. Distribute Sapporo Long Kow Vermicelli Noodles in small bowls.
  3. Add ingredients in hot pot as desired and cook seafood and vegetables until done. Scoop the stock and ingredients to your bowl with Sapporo Long Kow Vermicelli Noodles.
  4. Dipping sauce options: light soy sauce, chili, coriander and/or XO sauce.
