Dairy-Free Chocolate Mousse with Almonds

Makes 4 servings

1 block Soft silken tofu (300g)

1/3 cup Coconut nectar or honey

1 tbsp Soy milk

2 Tbsps Peanut butter

2 Tbsps Unsweetened cocoa powder

1/4 cup Flaked almonds

  1. In a blender, puree the tofu, coconut nectar, soy milk, peanut butter and cocoa powder until creamy.
  2. Divide the mousse into 4 serving glasses and top with almonds. Chill in the refrigerator for one hour before serving.
