Transform your leftover rice into a sumptuous dish by adding some bits of Spanish chorizo and flavorful spices! This delightful Spanish Chorizo Fried Rice from can make your family’s morning extra special. It’s so easy to prepare: sauté the onions, garlic, and chorizo cubes, then throw in the rest of the vegetables and let them cook for another two to three minutes!
Spanish Chorizo Fried Rice
Makes 5-6 servings
2 Tbsps Olive oil
2 Red onions, finely chopped
5 cloves garlic, minced
1 Spanish chorizo, cubed
1/3 cup Tomato sauce
2 tsps Spanish paprika
1 sachet Saffron powder
4 cups Cooked white rice
1/3 cup Whole kernel corn
1/3 cup red bell pepper, chopped
2 Tbsps Chopped parsley
1. Pour olive oil in a sautéing pan set over medium heat. When oil is hot, sauté onions and garlic until translucent and aromatic but not burned. Add in chorizo and cook for 2-3 minutes until oil renders and meat is a bit crisp.
2. Next, pour the tomato sauce and sprinkle in Spanish paprika and saffron powder. Stir until spices are well incorporated.
3. Add in the white rice and continue cooking until everything is coated with the tomato spice mixture.
4. Toss in corn kernels and red bell pepper then cook for another 2-3 minutes. Just before turning off the heat sprinkle the chopped parsley. Serve immediately.
