Leftover Chicken Fruit and Green Salad
Makes 2-3 servings
3 cups Mixed salad greens (arugula, kale, rocket, lettuce)
1 cup Leftover roast chicken, sliced or cut into chunks
1 Green apple, sliced
1 Orange, segmented
1-2 Red radish, thinly sliced
1/3 cup Crumbled feta cheese
¼ cup Pecans
¼ cup Citrusy vinaigrette or any oil-based dressing
1. Arrange salad greens in a dish bowl.
2. Toss in the rest of the solid ingredients
3. Drizzle everything with the citrusy vinaigrette or any oil-based dressing of your choice. Serve immediately.
