Thinking of what to do with your leftover adobo? Here’s a fun and delicious way to make last night’s dinner into a cheesy afternoon snack. You can even use this recipe when there’s leftover pulled pork or beef stew. The secret to this flavorful sandwich is the combination of the cream cheese spread and achara that adds life to the leftover meat. Try it for yourself!
CHEESY ADOBO PANINI
Makes 4 servings
1½ cups Cooked chicken or pork adobo, flaked
½ cup Mayonnaise
*Salt and ground black pepper, to season
4 pcs Large pan de sal
½ cup Cream cheese spread
*Peeled cucumber, thinly sliced
½ cup Papaya atsara, drained and squeezed
2 Tbsps Butter, softened
1. Make adobo filling. Combined flaked adobo meat with mayonnaise in a bowl and mix well. Season with salt and pepper. Keep covered in the refrigerator until ready to use.
2. Slice pan de sal in half using a bread knife. Spread the cream cheese spread generously on both sides of the pan de sal halves.
3. Put slices of cucumber over the cheesy spread, then top with the adobo filling. Spread some atsara over the adobo filling then cover with the other half of the pan de sal.
4. Brush sandwich on both sides with butter. Heat grill pan or panini maker and toast panini until crisp and golden on the outside. Serve with potato chips or French fries.
