Fruit Fridays: Fruit Basket Chocolate Cake


Bring out the romantic in you with this inspired and impressive dessert!

Fruit Basket Chocolate Cake

Makes 1 (9-inch) cake

1 1/2 cups All-purpose flour

1/4 cup Cake flour

3/4 cup Cocoa powder

1 1/2 cups Sugar

1 tsp Baking soda

1 tsp Baking powder

1/2 tsp Salt

2 large Eggs

1/2 cup Vegetable oil

1 cup Milk

1 Tbsp Vanilla extract

1 cup Hot water 

2 cups SNOW non-dairy whipping cream

1 kiwi, peeled and sliced

1/2 cup Sliced canned peaches

20 Strawberries 

3 Maraschino cherries

 

  1. Mix all-purpose flour, cake flour, cocoa powder, sugar, baking soda, baking powder, and salt in a mixing bowl. Add eggs, vegetable oil, milk, and vanilla extract to the dry ingredients. Mix thoroughly then pour hot water into the mixture and stir. Do not over mix.
  2. Divide the mixture into two and pour into two 9-inch greased baking pans.
  3. Bake in a preheated oven at 375°F (175°C) for 25-30 minutes or until toothpick inserted comes out clean. Cool the cakes completely before decorating.
  4. Using a stand mixer or a hand mixer, whip the whipping cream until stiff peaks form. Decorate the cake with a fruit basket design or as desired. Top with fruits.
